Lemon glazed sweet potatoes

Instructions
  1. Preheat oven to 180oc.
  2. Peel sweet potato and cut into thick round slices.
  3. Arrange sweet potato slices in a single layer on a baking tray.
  4. Mix brown sugar, lemon juice, cinnamon, and salt in a small bowl.
  5. Pour evenly over potatoes, cover with aluminum foil, and bake until potatoes are tender, about 45 minutes.
  6. Remove foil, return potatoes to oven, and bake until glaze becomes syrupy, about 5 more minutes.
  7. Serve!

Sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus.
