You would have received a beautiful kumera gold in this week’s box, so why not try something a little different? These glazed slices of sweet potato really shine with a lemon kick.
Ingredients
- 1 sweet potato
- 1 tbsp butter unsalted
- 2 tbsp brown sugar
- 1/4 tsp ground cinnamon
- 1 juice of lemon
- salt & pepper

Instructions
- Preheat oven to 180oc.
- Peel sweet potato and cut into thick round slices.
- Arrange sweet potato slices in a single layer on a baking tray.
- Mix brown sugar, lemon juice, cinnamon, and salt in a small bowl.
- Pour evenly over potatoes, cover with aluminum foil, and bake until potatoes are tender, about 45 minutes.
- Remove foil, return potatoes to oven, and bake until glaze becomes syrupy, about 5 more minutes.
- Serve!
Recipe Notes
Sweet potatoes are an excellent source of vitamin A (in the form of beta-carotene). They are also a very good source of vitamin C, manganese, copper, pantothenic acid and vitamin B6. Additionally, they are a good source of potassium, dietary fiber, niacin, vitamin B1, vitamin B2 and phosphorus.
